Carribbean Corn

Ingredients
1 bag Valley Fresh Steamers White Shoepeg Corn1 can Dole Pineapple Tidbits in juice1/4 c. lime juice2 tbsp brown sugar2 tsp. corn starch1 tsp ground thyme1 tsp pumpkin pie spice1 tsp allspice1 tsp salt1/2 tsp cayenne pepperbell pepper to taste
Directions
Mix lime juice, brown sugar, corn starch & spices. Pour into heated skillet, Cook to boiling, stirring constantly. Once thickened, add can of pineapple (undrained). Stir until combined. Add bell pepper & frozen corn. Cook 5-10 minutes on high heat (until corn is hot).

Makes approx 8 1/2 cup servings.
