Ingredients
This is a soup that can be adapted very easily... a variety of vegetables and beans, chicken, leftovers, you name it... so throw in everything but the kitchen sink! It's easy and delicious!
Directions
Brown the beef (or chicken) cubes in the olive oil and garlic. Then add broth, crushed/diced tomatoes and barley. Add the vegetables in the last 10 to 20 minutes of cooking time. You can substitute the high sodium of the French onion soup with diced onions and low sodium broth. Season to taste with basil, salt, pepper, etc.
