Crusty German Bread

Ingredients
* *Whole Wheat Flour, 1.5 cup * *Flour, white, 5 cup * Yeast, bakers, .4 ounce * Salt, .75 tbsp * Water, tap, 3 cup (8 fl oz)
Directions
Add all ingredients, including the warmed water, Flour last, in a bowl and stir until blended. DO NOT KNEAD.
Take a portion, about grapefruit size, and fold the dough under, until it forms a ball, or whatever shape you prefer. If it sticks too much dust with flour, sprinkle a Pizza peel with cornmeal and let is rise for 40 minutes.
After 20 Minutes turn the oven to 450F, put a stone on the middle rack and a pan for water on the lowest. When the rising time is done, slash the top of the bread lightly several times, slide the dough onto the stone and add a cup of water into the pan. Bake for 35 minutes, or until the bottom of the bread sounds hollow when thumped.
Keep the rest of the dough in a container with a loose fitting lid in the fridge and use up in a week. I use one of the large Vegetable keepers from Rubbermaid, it works great.
