Easy Black Bean Chilli

2 TBS Extra Virgin Olive Oil2/3 Cup Onion, Chopped2 Cloves Garlic, Minced2 Roma Tomatoes, Chopped1/2 Cup Corn, Frozen1/2 Cup Water1 Can (15oz) Black Beans1/3 Cup Pace Picante Sauce, Mild1/2 tsp Red Pepper Flakes
In medium saucepan heat olive oil over medium high heat.
Add garlic and onion and saute until onion begins to look clear. Add water, tomatoes, and corn.
Reduce heat to medium and stir in black beans, picante sauce, and red pepper flakes.
Cover and simmer on low heat for 10 minutes.
Yields 3, 1 cup servings.
Garnish with 1 TBSP Fat Free Sour Cream, if desired.
