Salsa Chicken Fiesta

2/3 Cup Bisquick2 tbsp water1 egg1.5 cups shredded cheese2 tsp olive oil2 boneless, skinless chicken breast halves, cut into 1/2" pieces1.25 cups Salsa
Heat oven to 400 degrees. Spray 8" square pan. Stir together Bisquick mix, water and egg. Spread in pan; sprinkle with 1.25 cups of the cheese.
Cook and stir chicken in oil over medium-high heat until outsides turn white;drain. Stir in salsa; heat until hot. Spoon over batter in pan to within 1/2" of edges.
Bake 22-25 min or until edges are golden brown. Sprinkle with remaining cheese. Bake 1-3 min or until cheese melts; loosen from sides of pan. 6 servings

I used heart smart bisquick and 2% cheddar cheese for this recipe. I found it to be quite filling but i did need to double the crust as the amount here was not enough to cover the bottom of the pan and I found to to be hard to work with(sticky). Had a salad on the side and it was perfect! Easy too! - 11/10/09
