Cucumbers in Sour Cream

Ingredients
1 Tbsp + 1 tsp salt (prefer sea salt)3 medium-sized cucumbers, sliced thin1 medium-sized onion, sliced thin1/2 cup sour cream (prefer full fat content for taste)1 Tbsp sugar (prefer raw cane)1 Tbsp lemon juice (fresh squeezed for best taste)Dash of black pepper1 tsp sesame seeds (optional)
Directions
Mix 1 tablespoon of salt with cucumber and onion slices; set aside for 15 to 20 minutes. Mix together remaining ingredients. Rinse the salted cucumber and onion in clear water; press out liquid. Stir in the sour cream mixture. Chill before serving.

No serving yield is suggested in this book, but I wouldn't recommend eating more than a quarter to half of it, as it's more of a dip than anything. I suggested the yield at 4 servings for this recipe.

    No problem at all; glad it's something you recognized. I'm a little alarmed at the sodium content, but other than that it's a sane-enough recipe for dieting I think.
