1 tbsp. olive oil1 large onion, chopped3 stalks celery, chopped3 cloves garlic, chopped1 large can diced tomatoes8 cups water1 cup chopped carrots1 potato, diced1 cup pearl barley, uncooked2 vegetable boullion cubes1 tbsp. salt1 tsp. ground pepper2 tbsp. dried parsley1 tbsp. dried dill2 tsp. Italian seasoning2 cups spinach leaves
In a large pot, saute onion, celery and garlic until soft. Add rest of ingredients except spinach. Bring to a boil and simmer until barley, carrots and potatoes are cooked. Add spinach and turn off heat.
