Carrot, Coriander and Orange Soup

6 Large Carrots or approx 1 1/2lbsHome made vegetable stock approx 750gm50g butter, flora or nut butter (light obviously gives lower cals)1 large orange2T Coriander leafSprinkling of coriander to dressSalt to taste
Prepare vegetable stock by boiling 750 gm (approx) water and adding any veg you have, I use Brocolli, cabbage and even used cucumber once. Cook for about 10mins.
Strain off veg leaving only liquid
Peel and slice carrots thinly
Melt butter on low heat
Add carrots and sautee until soft (15mins) stirring occasionally sprinkle with pepper
Add vegetable stock
Peel orange and squeeze all the juice into soup then add pulp
Add your coriander
Bring to boil then simmer for 45mins
Add sprinkling of salt to taste
Let cool slightly then blend
Serve with a sprinkling of coriander or for a few extra calories a swirl of créme fraiche
