Garlic Brown fried rice

2 cups cooked long grain brown (day old preferred)2 large eggs-beaten6 cloves of garlic-minced2 T Lite Soy Sauce1/2 bag Mixed Vegetables, frozen1 pat butter, unsalted2 T Olive Oil
Melt butter in wok. Saute the garlic till about half done. Dump in brown rice. Let sit until you hear sizzles and pops, then start stir frying it for a couple minutes. Dump out onto a plate and keep warm. Put 2 T Olive oil in wok and let heat up. Add eggs and scramble up. When they are cooked add rice back in. Add half bag of veg and soy sauce. Stir fry for a few minutes and enjoy.
Serves 4
Use day old rice if available or I will cook up and lay out on foil so it will dry out some. Fresh rice doesnt stir fry well.
