Ham and Cheese Quiche with mashed potato crust

Ingredients
Crust: 1 cup mashed potatoes1/4 c skim milk1 tsp olive oilsalt and pepper to tasteBake in oven for 10 mins at 350 F. Remove and fill with following mixture:3 eggs4 egg whites1/2 cup milk1/4 cup onion diced2 slices Larsen ham (bacon style)1/4 cup finely grated marble cheese1/4 tsp red pepper flakespepper and salt to tasteFill potato crust muffin tins evenly with above mixture and bake at 350 for approximately 20 - 25 mins or until cooked through.
