2 packages of prepare potstickers or gyoza skins find ones wiithout egg).Filling:6 large carrots, grated1/4-1/2 small head of cabbage, sliced thinly1/4 c. unsweetened rice wine1 can (small, 10oz) bamboo shoots1 handful of dried shiitake mushrooms, soaked (10-20 mushrooms, to taste)1 cup TVP, hydrated with some-soaking water, then drained2 T. white or yellow miso, mix until smooth with about 1/4 c. watersoy sauce to tastewhite pepper to tastechopped scalliions (optional)2 T. cornstarch
1. Prepare filling in a large pot and saute, when carrots and cabbage have soften,placed about 1/2 of the carrot/cabbage mixture in a food processor and process with the bamboo shoots, and mushrooms, then the remaining of the ingredients. The filling should be moist and cohesive, but not drippy, so adjust water amounts.
2. Place a small blob of filling in the center of each potstickers wrapper, fold the wrapper in half, using water to seal. join the pointsof the resulting half circle together.
3. Place several potstickers on a bed of cabbage leaves in your bamboo steamer over a pot of boiling water. Cover, for about 7 minutes.
