Beet Potato Latkes Muffins (Vegan)

Ingredients
5 small beets1 medium potato1 small onion1/4 cup tofu3 Tablespoons whole wheat flour1/4 tsp salt1/4 tsp pepper
Directions
Grate beets, potato, onion and tofu in a food processor. Mix all with the flour, salt and pepper until color is even.

Portion into greased muffin tins, pressing down to form dense cakes.

Bake at 350 for 40-50 minutes.
