Chicken and Brown Rice Soup with Lentils

Ingredients
3 Boneless, skinless chicken breast halvesWater2 medium carrots, sliced2 stalks celery, chopped2 scallions, chopped1/2 cup instant brown rice1 cup rinsed lentilsGarlic powder, thyme, salt & pepper to taste1 tbsp chili powder1/4 cup salsa
Directions
Boil the chicken & veggies together with seasonings until cooked through. Remove the chicken and cut into bite sized pieces and add back to broth. Add lentils & cook for 20 minutes then add instant rice and salsa. Cook another 10 minutes.

Makes about 6 1-cup servings (depending on amount of water used).
