Apricot and Beet Soup

Ingredients

5 large beets. roughly chopped1 small onion, roughly chopped3 cups chicken broth1 cup dried apricots, chopped1 cup orange juicesalt and pepper to taste
Boil beets until cooked and remove skin
Add beets and 1/2 onions in pan with chicken stock, bring to boil , cover and simmer for 10 minutes.
Puree in blender.
Season to taste.
Place the rest of onions in a pan with apricots and orange juice, cover and simmer gentley for 15 minutes.
To serve, swirl the two mixtures together in individual soup bowls for a marbled look. Serve while warm
