2 slices Louis Rich Turkey Bacon, chopped1/2 cup Onion, chopped1/2 cup Green Peppers, chopped (remove)2 clovesGarlic, minced1 15 oz. can Goya GreenPigeon Peas, undrained1 packet Sazon Goya con Achiote y Culantro 1/2 cup Tomato Sauce3 cups Water2 cups rice
Heat large skillet over medium heat. Add bacon, onion, and peppers; cook 3 minutes. Stir in garlic and cook 2 minutes longer. Add remaining ingredients except rice. Bring to boil. Stir in rice; cover. Reduce heat and simmer 20 minutes or until rice is tender.
In place of pepper and onion add two-three TBSP of sofrito. You can also substitute turkey bacon for 1/2 cup of ham ot bacon.
