Portabella Delight

Ingredients
Portabella Mushroom caps (6)Large Tomato (cut into thin slices)Mozarella Cheese (fresh, large round, sliced)Basil (fresh)Balsamic Vinegar
Directions
Wash the portabella mushroom caps and pat dry. Place to side. Thinly slice the tomatoes and slice the mozzarella cheese. Chop the basil. In a pan drizzle balsamic vinegar in the bottom. Place the mushroom cap in the pa, cap side down (so inside is facing up). Place a slice of tomato on the mushroom followed by the cheese and a little basil and cracked pepper. Meanwhile make a reduction of balsamic vinegar for dressing and set to side. Place the mushrooms in the oven at 350 degrees to just melt the cheese and to make the mushrooms a little tender. (You can boil the mushrooms first if you like before you add your garnishments).Once you remove from oven, drizzle the mushrooms with the balsamic reduction. Serve and eat!
