Chicken Burgers with Olives and Sauteed spinach & tomatoes

4 Chicken Breasts (Skinless and Boneless) Ground8 Black/Kalamata Olives 2Tbl Capers4 Cloves Garlic1Tbl Olive Oil1/4C Panko (or regular) Breadcrumbs1/2 tsp Black Pepper1 oz Hard Parmesan Cheese shaved1 C cherry tomatoes1 bag spinach1 Red/Purple onion halved and then sliced 3Tbl Fresh oregano
These make huge burgers - you could easily get six decent sized burger patties out of this if you're trying to stretch a dollar or calories. =-)
TOPPING:
Cut onion in half and then slice thinly, combine with tomatoes and 2 of the cloves of garlice in a lightly greased saute pan. Cook on medium until tomatoes have split and garlic and onion are translucent. Add spinach and oregano and cover, cooking until spinach is wilted. When spinach is done, make sure all tomatoes are smashed and set aside.
BURGERS
Put all ingredients except bread crumbs and cheese in Vitamix or Food Processor and grind/blend until it is the consistancy of ground beef or sausage.
Remove from Vitamix/Food Processor and place in a bowl, add bread crumbs and mix together by hand.
Form 4 burger patties and grill or cook in a lightly greased pan. When burgers are almost done, sprinkle cheese on the top of each patty and cover pan until cheese is melted.
Top with the spinach tomato mixture and serve on a warm burger bun.
