Creamy tomato soup

0.5 block of soft tofu2 lbs tomatoes1 red bell pepper1 onion1 cup vegetable brothabout 4 tbsp olive oil4 garlic cloves (or more, I used a lot)basil
place the tomatoes, onion, garlic, and bell pepper in a roasting pan. Drizzle with olive oil and roast for 30 - 40 minutes at 350 degrees.
pour all ingredients into a soup pot and add veggie stock and tofu. Blend with an emulsion blended until smooth. Simmer for 10 minutes. Stir in basil and serve.
