Steak Soup

Ingredients
1lb. round steak, chopped1 cup unsalted butter1 cup of Garbanzo Bean Flour2 cups of water2 cups of beef broth1/4 Tblsp. of black pepper1 lg. carrot1 (16oz. pkg.) frozen vegetable mix 160z, Hunts Fire Roasted Diced Tomatos
Directions
Makes 8 - 2 cup servings

Make a roux by melting the butter, then stir in the flour. Brown gently.

Gradually add 2 cups of the water to the roux and stir until smooth. Add the remaining water, the carrot, frozen vegetables and canned tomatoes.

In a skillet saute the steak in a pan sprayed with cooking spray until browned. Drain off the grease and add the steak to the soup. Simmer, stirring occasionally for 1 1/2 hours or until the vegetables are tender.

Freezes great.
