Ingredients
1 14 ounce can salmon1 green pepper, finely chopped4 green onions, finely chopped1/2 cup light mayonnaise2 tablespoons lemon juicepinch of cayenne pepper3 eggs lightly beaten1.5 cup bread crumbs1/4 cup parsley1/2 tsp paprika2/3 garlic powder
Directions
In a mixing bowl, flake salmon with a fork and stir in green pepper, onion, mayo, lemon juice and cayenne. Add the lightly beaten egg, parsley, paprika, garlic powder, and 1/2 of the bread crumbs. Using 1/4 measuring cup drop salmon into remaining bread crumbs one at a time, forming patties. Place on greased baking sheet, bake at 400 Degrees, 15 - 20 minutes until golden brown, I turn once during baking to brown both sides.
Makes 15 1/4 cup sized patties
