Garlic Spinach over Brown Rice

Ingredients
Rice Brown Basmati, Lundberg 1 CupNatures Promise Baby Spinach, 10 cup Raisins, 1/4 cup, packedAlmond Milk, Blue Diamond Almond Breeze Original Unsweetened, 1/4 cupDry Roasted Sunflower Seeds, 1/4 cupExtra Virgin Olive Oil (Filippo Berio), 1 tbspFresh, Raw Garlic 5 cloves
Directions
Cook rice as directed (w/o added butter/oil/margarine)

Soak Raisins in Almond milk until plump (heat if desired)

Heat Olive Oil and Garlic in pot until soft.
Rinse Spinach, add (wet) into the pot and stir on high heat until wilted.

Add rice to Spinach Garlic mixture.

Mix in Raisins (w/ any left over milk) and Sunflower Seeds

Enjoy!
