Eggs, potatoes and steak Oh My!

Ingredients
Directions
1 tblspn extra light olive oil2 small potatoes1/2 sweet onion2 cloves garlic8 oz steak (I use flank or flat iron)3 cups spinach1/4 cup cheese blend4 large eggs or 5 smaller eggs whisked1/2 cup parmesan cheeseany spices you like (I use onion and garlic powder, dried basil and black pepper)
preheat oven to 400
Heat olive oil in a medium pan
slice potatoes, garlic and onions thin and add to olive oil
cook until they begin to brown
slice the steak into thin strips and add to pan
heat through and then add spinach
sprinke cheesse blend on top
add the eggs
put in oven for 25 minutes
sprinkle parmesan cheese on top and put back in oven for about 5 minutes, broil if you would like the parm crispy
serves 4
