Kelly's Slow Cooker Beef BBQ

3lb boneless beef chuck roast (3.5 bone & fat)2 medium vidalia onions4 garlic cloves1.5 c ketchup2 Tbs brown sugar1.5 Tbs white vinegar1 Tbs Dijon mustard1-2 Tbs Worcestershire sauce1 tsp liquid smokecilantrosalt pepperwater (to 3/4 line of beef)
makes 6 cups (24 1/4cup servings)
Slice onions, place in bottom of slow cooker. Trim any fat possible and place roast on top of onions. Mix other ingredients and pour on top of roast. Add water to side up to 1/2 or 3/4 line of roast (do not cover meat). Heat on High approx 6 hours. Remove beef from slow cooker, trim fat, shred. Return to slow cooker. Remove 1/2 cup liquid from slow cooker, add 1 Tbs corn starch to liquid and mix well. Return liquid to slow cooker, mix. Cook on low or warm setting until ready to eat.
