Moo Shu Chicken

Ingredients
1 tablespoon Asian sesame oil (or Veg. oil)1 16 oz bag shredded coleslaw mix1 bag (8oz) shredded carrots4 green onions, sliced2 garlic cloves, chopped1/4 cup hoisin sauce2 tablespoons light soy sauce10 flour tortillas3 cups shredded cooked chicken breast
Directions
In a large skillet, heat oil over medium heat. Add the coleslaw mix, carrots, scallions and garlic. Cook stirring occasionally, about 6 minutes or until vegetables are softened.

Stir in the hoisin and soy sauces and cook for 2 minutes. Add shredded chicken, stir to combine with the vegetables and heat through.

Wrap a generous 1/2 cup portion of mix into tortilla and serve. Makes 10 servings. Substitute tofu for chicken for a veggie option. Use a rotisserie chicken for extra flavor but add a few more calories and fat.
