King Ranch Casserole

Ingredients
12 corn tortillas1 lb. lean ground beef1 can Cream of Mushroom Soup1 can Cream of Chicken Soup1 can Rotel tomatoes8 oz. Shredded 2% Mild Cheddar Cheese
Directions
Preheat oven to 350 degrees. Brown ground beef in skillet and drain excess fat. In a mixing bowl, combine both cans of soup, Rotel tomatoes, 4 oz. of shredded cheese, ground beef, and the tortillas torn into bite size pieces. Grease a 9 x 13 in. pan with cooking spray and spread the mixture evenly into the pan. Cover the pan with aluminum foil and bake for 45 minutes. Remove the foil, add the rest of the cheese to the top of the casserole and continue to back for another 15 minutes.
This makes approx. 10 servings.

    I made this and it's good, but it's not got a whole lot of flavor. I think next time I'll mix some taco or enchalada seasoning in with the ground beef. That should give it the extra kick I'm looking for. - 7/16/07
