Healthy Tuna Casserole

4 oz. Barilla Multi-Grain Elbow Pasta8 oz. crimini mushrooms2 oz. chopped onion5 oz. california blend vegetables, chopped1 can tuna in water, drained2 oz. cheddar cheese, shredded1 oz. asiago cheese, shredded2 Tbs. reduced fat sour cream1/2 tsp. garlic powdersalt and pepper to taste
Cook pasta according to package directions.
Saute vegetables using butter flavored cooking spray. Stir in tuna and sour cream. Add 3/4 of the cheese. Mix in pasta. Place in a glass loaf pan. Sprinkle remaining cheese on top. Bake at 350 degrees for 15 - 20 minutes.
Makes 3 servings. For smaller portions, it could make 4 servings.
