Lasagna Mac

2 cups whole grain elbow noodles (or any other small and thirsty noodle)3/4 cup part-skim ricotta cheese1 cup shredded part skim mozzarella2 cups of your favorite spaghetti sauceItalian Seasoning SaltPepper
1. Bring water to boil on stove, seasoned lightly with salt and pepper. Preheat oven to 350.
2. Add 2 cups noodles, reduce heat and let cook until almost al dente (you want them to be a little hard still), should take about 5 minutes
3. Remove from heat and drain with colander
4. In a medium bowl, add noodles, all of the ricotta cheese, 1/2 cup of the mozzarella cheese and 1 cup of the sauce. Add seasoning at your discretion. Stir together.
5. Gently push into casserole dish and even out with spoon.
6. Coat top with remaining sauce and even out. Sprinkle cheese.
7. Bake covered for 10 minutes. Then bake uncovered for 5 minutes.
8. Remove with hot pads and let cool for about 5 minutes. Serve. Works nicely with salad, broccoli, or squash.
