2 eggs lightly beaten1 medium onion4 green onions diced8 oz diced ham2 tablespoons Oil2 Cups cooked rice1/2 Cup frozen peas2 tablespoons soy sauce
For best results, make rice a day ahead of time and allow to cool. Season eggs with Salt and Pepper. Heat 1 TBSP oil in a wok. When the oil is hot, add the eggs and cook, pulling the egg apart. When the egg is cooked, remove and set aside. Add the remaining oil and swish around in the pan to coat the sides and bottom. Add onion and cook till it is clear. Add ham and stirfry for one minute. Add the rice and the ha, and cook for about 3 minutes or until heated through. Add soy sauce and stir through rice. Add egg and green onion and stirfry until completely heated through.
