Spiced Chicken Risotto with Mint

Ingredients
9 oz chicken3 garlic cloves1 tsp ground tumeric2 tbs olive oil2 medium carrots diced2.5 cups long grain rice9 oz tomatoes chopped3 cups chicken stockFor lemon & mint relish3 tomatoes diced1 bunch mint5 sprig scallionjuice of 2 lemonssalt
Directions
1. mix diced chicken with half the garlic and tumeric. Heat 1 tbs oil in a pan, add the chicken & fry until the chicken has cooked through thoroughly. Remove from teh pan and set aside.
2. Add the remaining oil and garlic with the carrots and rice. Stir-fry for 1-2 minutes.
3.Add the tomatoes and chicken stock to the pan ahd bring to a boil. Cover and simmer for about 10 minutes
4. Meanwhile make the relish by mixing all the ingredients in a bowl.
5. When the rice is almost cooked, fork in the chicken and heat through. Serve wtih relish
