Ingredients
Chicken Breast, no skin, 12 ouncesBlack Olives, canned (small can), 2 small Broccoli, fresh, 1 cup, choppedCauliflower, raw, 1 cup Celery, raw, 1 cup, dicedGarlic, 2 tspMushrooms, fresh, 1 large basketsOnions, raw, 1 cup, choppedGreen Peppers, 1 cup, choppedSummer squash, 1 cup, choppedZucchini, 1 cup, slicedRed Peppers, 1 cup, chopped Tomato Paste, 1 can (6 oz) Beans, black, 1 regular canDiced Tomatoes w/ Basil, Garlic, and Oregano regular canBalsamic Vinegar, 4 tbspChicken Sausage (Emeril's), 3 linksDry Italian Seasoning Your choice
Directions
Spray large pan with PAM.
Add garlic, chicken and sausage. Sprinkle with dry seasoning.
Cook over medium heat till done, remove meat from pan set aside.
Spray pan with PAM.
Add all vegetables, tomatoes and tomato paste, and vinegar. Add more (to taste) of dry spices as well.
Cook till JUST TENDER, do not over cook. Add meat to the vegetables, mix well

Serve 1 cup of vegetables over Brown Rice or Whole Wheat Pasta.

This will make about 12 servings of 1 cup each.
