Peanut Soba Noodles

8 oz. soba noodles, uncooked1/3 cup vegetable stock or water4 tablespoons reduced-fat peanut butter 1 tablespoon chopped peeled fresh ginger 1 tablespoon low-sodium soy sauce 2 tablespoons honey 1 tablespoon crushed red pepper flakes2-4 garlic cloves, minced
Cook noodles in boiling water as directed (no salt/fat added); drain. Stir together water or stock, peanut butter, ginger, soy sauce, honey, red pepper, and garlic till well combined (you may want to pop the mixture into microwave for 15-30 seconds if peanut butter is hard to dissolve). Toss with noodles.
Goes well with seafood, chicken, or pork (and, of course, goes very well with steamed veggies!).
