Awesome Blueberry Sour Cream Muffins

1 cup fresh or frozen blueberries2 Tbls. whole wheat flour1/4 cup unsweetened applesauce3/4 cup brown sugar - not packed, may use less2 eggs1 cup whole wheat flour1/4 cup oats1-1/2 tsp baking powder1/2 tsp baking soda1/2 tsp salt1 tsp cinnamon3/4 cup Light or fat-free sour cream1/2 tsp vanilla
Preheat oven to 400 degrees F. Prepare muffin tin - I fill the cups 2/3 full and it makes 14.
1. In small bowl, toss blueberries with 2 Tbls. flour. Set aside.
2. In a larger bowl, combine applesauce and sugar. Add eggs and mix well. Add vanilla.
3. In a smaller bowl, combine flour, baking powder, baking soda, salt & cinnamon. Mix well and add to the liquids in the larger bowl. Add sour cream & oats, stirring after each addition. Fold in blueberries.
4. Spoon into prepared muffin tin, filling 2/3 full. Fill any remaining cups 1/2 full of water. Bake in preheated oven for about 20 minutes. Depending on your oven, you may want to go 2-3 minutes more.

I made these tonight after I'd bought fat-free sour cream by mistake (eww!) but didn't want to throw it out - so glad I did! I added some linseed as well, very yummy, moist, not too sweet, even my husband AND my 14-month old enjoyed them! (I'm not sure why my photo has uploaded sideways, though?) - 5/14/14

These were good, but not quite as moist as I'd hoped. Maybe it's because I used the precise ingredients called for rather than the substitutions the last reviewer used. Or perhaps it was because my blueberries were canned rather than being fresh or frozen. I would experiment around a bit more. - 1/17/11

These are great! They are light and not dense and have a great flavor. I didn't have any quick cooking oats so I used one packet of instant berry oatmeal, and blueberry soy yogurt instead of the sour cream because I'm lactose intolerant, and they turned out amazing! I'll be making these again! - 12/2/09
