3 cups of fresh spinach1 cup black beans1/2 cup of sweet pepper (orange,red or yellow)2 tbsp olive oilbalsamic vinager to tastelemon pepper to taste

Combine ingredients and toss! Makes 1 serving. Easy to double or triple for more. It's a great quick light lunch.
