Nutty Fruit Energy Bars

2 cup oats (quick cook or regular)1 cup whole wheat flour1 1/2 unsalted brown rice cakes (crushed) -or- any low sugar/sodium cereal1/2 cup liquid egg1/2 cup unsweetened applesauce1/4 cup honey3 Tbs organic (or not) brown sugar3 Tbs maple syrup1/4 cup unsalted peanut butter (smooth)1/4 cup raw sunflower seeds1/4 cup raw pumpkin seeds1/4 cup chopped pecans1/4 cup slivered almondsCAN USE ANY COMBO OF NUTS YOU PREFER AS LONG AS IT EQUALS 1 CUP2 cups chopped dried fruit (your choice, I like dates,pineapple,cranberries and cantaloupe, or whatever you have on hand)
Preheat oven to 325
Line a 9x13 pan with foil and spray w/cooking spray
Add ingredients in the order listed, stirring as needed to mix gently.
Spread evenly in foil lined pan, pressing down with fingers.
Bake 30 min or until firm and slightly brown around edges.
Cool.
Lift foil from pan, cut into 18 equal bars and enjoy.
