Ingredients
2 tbsp. olive oil2 cups diced yellow squash1 cup diced tomatoes1/2 cup diced onionsdash of salt and pepper2 tsps. comino
Directions
Warm olive in a skillet over medium heat. Add squash and onions. Saute until slightly tender. Stir in the spices. Place the tomatoes on top of the squash mixture. Cover and cook for 5 min. This makes 2 1-cup servings.
