Tofu Thai Red Curry

Ingredients
1 block extra firm tofu - drained and cubed2 bell peppers, sliced2 cups snow peas or pea pods1/2 cup onion, chopped into 1 inch pieces3 Tbsp fish sauce2 Tbsp Red Curry Paste1 can light coconut milk1/4 cup sugar2 tsp cornstarch1 14 oz can pineapple chunks, drained
Directions
In a bowl, whisk together curry paste, cornstarch, fish sauce, and sugar into coconut milk. In a wok, stir fry fresh vegetables for 5 min. Transfer vegetables out into a separate bowl. Pour sauce mixture and tofu into pan and heat for 10-15 min. saturating all sides of tofu. Add vegetables and pineapple chunks. Toss all ingredients together in pan to maximize flavor. Serve over brown rice.
