Crockpot Diet Cabbage Soup

Ingredients
--1 small head of cabbage--2 large carrots--8 stalks celery--1 red bell pepper (1 cup chopped)--1 medium zuchinni--1 cup chopped yellow onions ( 1-lg)--1 clove garlic, minced--1 can (14.5 oz) tomato petite dice--1 t of your favorite seasoning blend--1 pkg dry onion soup mix--1/4 t red pepper flakes (optional)--4 cups beef broth--4 cups water
Directions
The Directions.
--chop all vegetables into bite-sized chunks and place in crockpot
--cover with liquid (broth and canned tomato)
--add spices and stir.

cook on low for 8-10 hours

    I used chopped kale in place of the zucchini and bell pepper. would also use fresh or frozen spinach. I omitted the onion soup and used Herb Ox bullion. Only used 3-4 stalks of celery. This recipe is really good! Very filling and very economical to make. Makes a large patch. :) - 4/8/13
