Spicy Vegtable Lentil Soup

Ingredients
Onions, raw, 1 medium (2-1/2" dia) Celery, raw, 2 stalk, medium (7-1/2" - 8" long) Olive Oil, 2 tbspGarlic, 8 clovesVegetable Broth, 6 cupCarrots, raw, 3 mediumRed Ripe Tomatoes, 6 medium whole (or 28 oz can diced)Lentils, 1 cup dryPasta whole wheat, dry, 2oz, aproximatly 3/4 cupPepperCayenne pepper
Directions
Bring lentils and two cups water to a boil. Reduce heat, cover and simmer until soft.

Chop onions and celery. Put into stock pot with olive oil and cook over low heat until soft.

While they cook mince and peel garlic. Chop tomatoes. Peel and slice carrots. Add garlic and saute for 30 seconds. Add vegetable broth, tomatoes, carrots, pepper, and cayenne pepper. Bring to a boil. Reduce heat and simmer for 20 minutes.

Add pasta and simmer 10 more minutes before serving.
