Tri-Tip & Roasted Red Onion Sliders with Blue Cheese Aioli

Ingredients
Tri-Tip and Marinade:1 cup lite soy sauce4 cloves garlic-chopped fine2 fresh limes-juicedsalt & pepper1 Tri Tip Roast-1-2lbsOven Roasted Red Onions:3 red onions-sliced ¼ “ thick3 TBL olive oil3 TBL balsamic vinegarsalt & pepperBlue Cheese Aioli:1 cup light mayonnaise6 cloves garlic-pressed4 oz Point Reyes blue cheese1 TBL Dijon mustard
Directions
Tri-Tip and Marinade:
Mix soy sauce, garlic, limejuice and salt and pepper together, and place in zip-lock bag. Place tri-tip roast in bag and marinate for at least 6 hours, turning over bag to ensure marinade reaches all parts of the roast. Grill tri-tip on outside grill or roast in oven at 375 degrees, fro about 40 minutes or until medium rare. Once cooled, slice tri-tip against the grain into thin slices. This tri tip is great for any meal.

Oven Roasted Red Onions:
Place sliced red onions in bowl, add olive oil, vinagar, salt and pepper and toss well with onions. Place onions on baking sheet and spread a part onion slices. Roast in 375º oven and bake for 30-40 minutes, until onions are somewhat browned. Let cool to room temperature.

Blue Cheese Aioli:
Mix all these ingredients and whisk until well blended.

To Assemble Sandwiches:
This is the easy part. Warm rolls then cut all the rolls you are going to need. Spread blue cheese aioli inside, then place sliced tri-tip and roasted red onions inside roll. That’s it. Yummy! Get the George Foreman grill out and get to grillin'.

    Great Recipe, but the onions for 30-40 mins at 375 did not work. My onions were charcoal at the 20 minute mark, had to redo them...Brought them as an appetizer for Easter dinner, people were raving!! - 3/31/13
