Peppers, sweet, red, fresh, 2 medium, choppedRed Ripe Tomatoes, 2 medium whole, choppedGarlic, 3 clove, mincedOnions, raw, .5 cup, choppedChicken Breast, no skin, 1.5 unit (yield from 1 lb ready-to-cookOlive Oil, 2 tbsp
Heat olive oil in pan. Add minced garlic and chopped onion. Add any desired spices (cumin, coriander etc). Add chopped peppers. Saute till onion, peppers are soft. Remove all white meat from a rotisserie chicken and add to onion pepper mixture. Add tomatoes, cover and saute for 10 min. Add water if needed to create a little sauce. Add salt and pepper to taste. Serve with pita bread.
