Olive Garden Copycat Zuppa Toscana

Ingredients
2 large russet baking potatoes1 lb of Italian turkey sausage1 large onion1 box low sodium chicken broth1 quart water2 cloves garlic (I add more)salt and pepper to taste4 cups kale1 cup powered fat free milk
Directions
Place pierced baking potato in microwave and cook till done turning have way through maybe 7 minutes or more.. Brown sausage on all sides. Turn down heat.. put on a lid ans simmer till done, remove sausage to cool and slice.
Chop onion and add to the sausage drippings..saute'...add a cup or so of the chicken broth and scrape bottom of pan...pour all into a duchoven....add rest of chicken broth, water, garlic, salt and pepper, kale. Take the cooled potatoe and cut into chunks and add to pot with the sausage simmer till flavors come together...lastly add powdered milk slowly and stir till desolved. Makes serving for 6.

    Dinner tonite, very good. I cooked potatoes in broth on stove instead of a microwave (not everyone has one) and used Trader Joe's organic bacon, crumbled, and a few homemade croutons as garnish. - 6/3/18
