Santorini Eggplant Salad

1 eggplant, sliced in half lengthwise2 Tbsp. onion, minced1-2 garlic cloves, minced2 Tbsp. olive oil2 tsp. red wine vinegarsalt and pepper to taste
Grill the eggplant until tender (may be roasted in a 375 degree oven for 45mins to 1hr.) Let the eggplant cool slightly then remove the skin and dice. Mix with remaining ingredients and salt and pepper to taste. Let sit briefly for the flavors to come together. Enjoy with toasted pita slices. Makes approximately 2 1/2 cups dip or 5 - 1/2 servings.
