Lentil & Bacon Soup

Ingredients
4 slices bacon, cut into small pieces1 c diced celery1 c diced carrots2 large onions, diced6 cloves garlic, sliced1 red pepper, diced4 carrots, peeled and sliced6 cans beef broth2 cans diced tomatoes2 T tomato paste2 c lentils, washed and picked over.5 c brown rice, rinsed2 T fresh thyme 1/2 c fresh parsleysalt and pepper to taste
Directions
Cook bacon pieces in large stock pot until brown
Pour off most of the fat
Add next four ingredients, sautee until clear but not brown
Add remaining ingredients, cook until lentils and rice are tender - 1.5-2 hours.
