Bulgur Wheat, Feta & Broccoli Salad

Ingredients
75g bulgur wheat125g broccoli floretsJuice 1 lemon3 tsp olive oil½ clove garlic, crushed100g feta, crumbled2 tomatoes, dicedSmall bunch Italian parsley, chopped
Directions
Tip the bulgur into a pan of salted boiling water. Remove from the heat, cover and soak for 10-15 minutes. Drain well. Blanch the broccoli until just tender but still bright green. Toss the bulgur with all the other ingredients and season.
