Three Cheese crunch'n'mac

1 cup whole rain elbow noodles1/2 cup shredded 2% cheddar1/4 cup shredded mozzarella1/4 cup shredded processed gouda1/2 cup lowfat milk1 tablespoon non-hyrdogenated tub margarine1 tablespoon canola oil2 tablespoons unbleached enriched flour7 whole wheat saltine crackersSaltPepperGarlicParsley
1. Bring water to boil in medium pot on high heat. Add salt and pepper.
2. Add Noodles and cook until al dente, about 7 minutes.
3. Drain and set aside.
4. In a sauce pan, make a white sauce, starting out by melting margarine and oil together, then add flour and whisk.
5. Add milk and garlic. Whisk until smooth.
6. Add all cheeses and whisk until cheesy and SAUCY.
7. Combine nooldes and cheese.
8. Crumble crackers and sprinkle on top.
9. Garnish with parsley.
10. Pair with salad, brocolli, or other low calorie vegetables.
