Asparagus Quiche

Ingredients
Asparagus Spears (1 c) - steam until slightly tenderMilk, 1% (2 c)Eggs, large (3)Green Onions (1 T.)Mozzarella Cheese, shredded (1 c)Pie crust (single, handmade or frozen)Salt (dash)Pepper (taste)
Directions
1 9" pie plate
1 single crust pie
Mix all incredients except cheese in bowl. Add a little pepper and salt. Pour bowl contents in prepared pie crust. Sprinkle 1 c cheese. Place in 375 oven for 35-40 min. Remove let rest for 20 min or so. Cut into 8 slices. Serve warm.

    I liked how it tasted, but it did not set well, so the texture was a little gross. Maybe less milk/more cheese or egg, or maybe add some cornstarch to help it stick together? Nutritionally great for me as a vegetarian looking for protein. - 6/9/10
