Red Wine Balsamic Keilbasa and Quinoa

Ingredients
8oz of Turkey Keilbasa1 tbsp Olive Oil5 spears of asparagus (about 1/2 cup chopped)1/4 cup chopped turnips2 cups chopped Swiss Chard1/4 cup chopped red onions2 small stalks of celery1/2 each of red and orange peppers1/4 cup dry red wine~1 tbsp balsamic vinegarSpices to taste: Mrs. Dash and garlic salt1/4 dry quinoa2 oz shredded fresh parmesan
Directions
Cook the quinoa (add to simmering water and cover)

Chop the keilbasa into half circles and saute them in the olive oil slightly until they brown just a bit.

Add all the chopped vegetables and saute for another minute or two

Add the wine, vinegar, and spices

Allow the whole dish to cook uncovered stirring occasionally for about 7-8 minutes

Add the cooked quinoa and cook for another minute or so

Grate fresh, hard parmesan over the top just before serving
