Easy Cuban Black Beans & Rice

Ingredients
1 large yellow onion - diced2 garlic cloves - minced3 tsp cumin1/2 tsp cayenne (or less)1 tsp salt1/2 tsp pepper2 large cans (751g ea) black beans - drained and rinsed2 cups cooked brown rice
Directions
Saute diced onion in pan sprayed with olive oil spray till translucent. Add garlic and spices. Stirr till fragrant. Add drained and rinsed black beans. When heated through, add warm brown rice and stir to mix well.

Serve with chopped tomato, avocado, hot pickled carrots, etc. (Add calories for these additional toppings.)

    sounds great -- when I've had rice and beans with Cuban friends, they've also topped the dish with thin-sliced black olives and sometimes chopped hardboiled egg. - 3/10/10
