Wonderful Bran Muffins

3 cups Fiber One or All Bran1 cup boiling water1/2 cup splenda for baking1/2 cup brown sugar splenda1/2 cup egg substitute 3/4 cup applesauce2 1/2 cups whole wheat flour2 1/2 tsp soda1/2 tsp salt2 cups low fat buttermilk3/4 cup raisins
Pour boiling water over cereal and let it stand while you mix other ingredients
Mix together the rest of ingredients. Then add softened cereal. Bake 20 minutes at 400 degrees.
These do better and don't stick if you use the aluminum cup cake cups and spray them with a little veggie spray. Makes 30 muffins. Can be kept in the refrigerator for up to 3 weeks and bake as needed. I like to bake them all and freeze them. Makes 30 servings.
