Healthy Apple-Raisin Muffins

2 cups all-purpose flour1 tsp baking soda1/4 tsp cinnamon1/4 tsp ground ginger1/4 tsp allspice1/4 tsp nutmeg2 large eggs1 cup plus 2 Tbsp frozen apple juice concentrate, thawed2/3 cup lowfat buttermilk2 Tbsp oat bran2 small Granny Smith apples; peeled, cored, and chopped1/3 cup raisins
1. Preheat oven to 375° F and spray 12 standard size muffin cups with Pam.
2. Mix together flour, baking soda, cinnamon, ginger, allspice, nutmeg and salt.
3. Mix together eggs, apple juice, and buttermilk.
4. Stir flour mixture and oat bran into egg mixture until just moistened; do not overmix or your muffins will not be tender!
5. Fill muffin cups 2/3 full with batter.
6. Bake until lightly golden and tops spring back when pressed, about 25 minutes.
Makes 12 muffins with 158 calories each.
